In the game you can steal and ride them. (But that's it I think.) And you bond with it. It's health and stamina then increases, put your stirrup and saddle on them. Put cargo on both donkeys and mules. Such as animal carcasses and skins. Small game animals too. Like with a horse. This doesn't seem like a hard to create at all type of mod, at least for the knowledgeable and experienced modder.
